How do I bring my restaurant food cost down?

I'm a G.M. at a local pizza shop, and I need to bring my food costs down. I need some tips on how to bring it down, besides portion control and minimizing order mistakes.

  1. Having run a pizza shop, the first is clearly portion control. I lost a good 10 to 20% on slop.

    That being said, it really boils down to your buying power. If you can't buy in bulk, you may want to turn it around.

    focus on your "local grown toppings" and "organics". If you can't beat them in price, beat them in quality.

    People don't want rat poison in their pizza if you know what I mean.

Offer a cash bonus (from petty cash) for the best employee suggestion.  Another possibility is to offer specials on product lines that are less expensive.  Double sauce vs. double cheese.  I am partial to sauce and would camp out in your place with double sauce on special.  Cheese is for people who want a cheese sandwich.  Sauce is for real pizza people.  I am on a diet so you can take your time with advertising the double sauce special!!  Good luck.
