How do I burn dvd's really fast?

I have a MacBook Pro. Brand new.

Built in drive specs. 8x slot-loading SuperDrive (DVD±R DL/DVD±RW/CD-RW) Maximum write: 8x DVD-R, DVD+R, DVD+RW; 6x DVD-RW; 4x DVD-R DL (double layer), DVD+R DL (double layer); 24x CD-R; 16x CD-RW

I think those drive specs are good however I notice when attempting to burn a dvd with iSkysoft DVD creator it takes forever to convert the .avi to mpeg-2 even before the disk starts to spin for the burn.

What software can I use to make that faster?

You're kinda out of luck there.  The encoding process can take forever.  On my machine, to encode a 90 minute film, it can take ~8 hours or so.  This is largely dependent on your processor and graphics card.  You could try doing the encoding with some other software, like ffmpegx, if you want.  It may not make that much of a difference, though. You could also try lowering the quality settings in your software if there is an option like that.  The lower the quality of the product, the less time it takes to complete the encode.
