How do I cook Gallopinto!!?

Im an Irish girl who spent time in Costa Rica and am missing gallopinto like crazy :-( Can someone tell me how to make it exactly and what I use? I dont know what the beans are and am sure I cant get them at home. Also I've found plantain here but how do I cook that?! Think I need to go back!! Thanks Ticas x

    And about the plantain..you can either boil it whole in its skin and cook till u can stick a knife through easily.. then peal the skin off. Or what we like to do home is peel it, cut it into pieces, sprinkle with salt, pepper and a little flour, and fry it in some oil..really good.. hope i helped  


  2. 200g cooked rice

    250g cooked black beans & bean ’stock’ (cooked with 2 bay leaves)

    1 medium-sized onion

    1 green bell pepper

    2 stalks of celery

    2 garlic cloves

    2 tbsps fresh coriander

    2 tbsps olive oil

    salt and pepper

    heavy cream (optional)

    What to do next:

    While the rice and beans are boiling in separate saucepans, finely chop all ingredients. Add garlic and fry in hot oil, add onion and stir for a minute. Throw in pepper and celery and cook for 5-10 minutes on medium heat, until softened. Pour in beans and stock, then bring to simmer for 2-3 minutes while stirring. Season with salt and pepper. Just before serving, add fresh coriander.

    Serve with a dollop of cream on top (although this isn’t really necessary). We had it with rice on the side (normally this is served with white rice, but we used our usual mixture of brown basmati, red carmargue and wild rice) and a light tomato and celery salad. Enjoy!
