  2. CARROT CAKE WITH COCONUT CREAM CHEESE

    ICING  

    The Cake:

    2 cups sugar

    3 cups flour

    1 teaspoon baking soda

    1 teaspoon salt

    1 teaspoon cinnamon

    2 cups grated carrots

    1-1/3 cups vegetable oil

    4 eggs, slighly beaten

    1 cup chopped and toasted walnuts or pecans

    1 - 20 ounce can crushed pineapple, drained

    1 teaspoon vanilla extract

    1 teaspoon lemon extract

    1/2 teaspoon almond extract

    Preheat the oven to 350°F.

    Grease and flour two bread loaf pans. Combine dry ingredients in a large mixing bowl. Add carrots, oil and eggs. Beat well, until mixed. Add other ingredients and stir. Put into baking pans.

    Bake for 1 hour or until done. Completely cool cakes before frosting.

    The Frosting:

    1/2 cup butter, softened

    1 - 8 ounce cream cheese, softened(President-the brand)

    1 - 16 ounce box powdered sugar, sifted

    2 teaspoons vanilla extract

    1 cup chopped and toasted walnuts or pecans

    1 cup flaked coconut

    Combine butter and cream cheese; cream until light and fluffy. Add sugar and vanilla, mixing well. Stir in pecans and coconut. Spread on each cake. Store cakes in the refrigerator.

    Note: This cake freezes beautifully. Place on foil covered baking sheet. Freeze until hard. Remove from freezer and wrap in plastic wrap and then in foil. Return to freezer. Unwrap totally and then defrost cake.

    Ingredients



    Crust

        * 1¼ cups of shortbread crumbs

        * ¼ cup of ground almonds

        * 2 tablespoons of sugar

        * 1/8 teaspoon of almond extract

        * 3 tablespoons of melted butter



    Filling

        * 175 grams of chopped white chocolate

        * 1.5 kilograms of soft cream cheese

        * 250 grams of soft light cream cheese

        * 5 room temperature large eggs

        * ¾ cup of sugar

        * 3 tablespoons of flour

        * 1 teaspoon of vanilla essence

        * ¼ teaspoon of almond extract



    Procedure

       1. Mix ingredients for the crust (shortbread crumbs, ground almonds, sugar, almond extract and melted butter) and press into the bottom of a springform pan.

       2. Bake at 200 degrees for 5-6 minutes.

       3. Remove from oven and cool.

       4. When cool, grease the sides of the pan lightly.

       5. Melt and cool the chocolate.

       6. Mix together cream cheeses, then add eggs, one at a time.

       7. Mix in sugar, flour, vanilla, and almond extract.

       8. Stir 1 cup of mixture into the chocolate, then mix all.

       9. Pour into the pan and bake at 160 degrees for 40 minutes.


  4. Ingredients (serves 10)

    250g pkt Unibic Sponge Finger biscuits

    1 cup apple juice

    500g cream cheese, softened

    3/4 cup caster sugar

    1 large lemon, rind finely grated, juiced

    3 teaspoons powdered gelatine

    300ml pouring cream, lightly whipped

    375g small strawberries, hulled

    1/2 cup strawberry jam

    Method

    Grease and line the base and sides of a 5.5cm deep, 22cm (base) springform cake pan. Dip biscuits, 1 at a time, into apple juice. Use to line the base of pan, cutting to fit.

    Using an electric mixer, beat cream cheese, sugar and lemon rind until smooth. Heat lemon juice and gelatine in a small saucepan over medium heat, stirring with a fork until dissolved. Set aside to cool (gelatine and cream cheese mixtures must be at the same temperature before combining).

    Using electric mixer on low, beat gelatine into cream cheese mixture.

    Fold in cream, mixing until combined. Spoon filling over base. Smooth surface. Refrigerate cheesecake for at least 4 hours or overnight until set.

    Arrange strawberries, pointed end up, over cheesecake. Warm jam in a heatproof, microwave-safe bowl for 45 to 60 seconds on HIGH (100%). Strain through a sieve. Drizzle warm jam over strawberries.

    Chill for 30 minutes or until jam sets. Serve.

    Notes & tips

    Tip: Unibic Sponge Finger biscuits are also great for making tiramisu, trifles and many other dessert recipes.

  5. 1 tub of double cream

    2 oz of icing sugar

    1 tub of cream cheese

    Whisk the 3 together til smooth, and add any flavourings you want, I like the juice of 3 limes and a lemon.

    to make your base, crush a packet of digestives and melt 3 oz of butter, mix together and press into a cheesecake base.  When that is cooled put the cheesecake mix on top and leave til set.

    When i mean cream cheese, something like Philadelphia, a soft cream cheese, you could use marscapone as well, and I find if you make a lemon/lime one, a ginger biscuit used for the base is really good.

    That was a error it should have read butter.  Limes are the small green lemon like fruits.
