Question:

How do I cure a potjie?

I just bought a new potjie and I read somewhere that you need to make a fire inside the pot and burn it for a few hours. Not sure if this is correct. After that you clean it with wire wool and then boil it with vegetables for a few hours. Could someone please let me know if this is correct... Many thanks in advance!!

  1. OMG PLEASE DON'T LISTEN TO THE ABOVE unless you have a stomach like an ostrich !

    The reason why you have to cure a potjie is because if it is new and not enamel coated is because cast iron are poreous  and it has many microscopic cavities where germs can hide and make you sick as well as giving you metal poisoning !

    The only way is to heat it up thoroughly and boil a strong saltwater solution until dry .Then you fry some crackling (pork rind ) and smear the total inside of the pot as well as you can with the oil .The oil penetrates the metal and effectively seals all the pores ! You can wash the pot clean with normal sunlight liquid once you are done . Always store your pot with newspaper inside as the newspaper will absorb the moist inside and keep it from rusting .

It is quite a job, what you do is to first wash the pot inside and outside, then take a Scotch Brite sponge and start scrubbing it inside and out side, then take coarse salt and scrub and scrub it inside, the what I do is I take potato peels (aartappelskille) and boil and boil it....then I wash it again, srub it again, salt it again and then boil something again. Then I wash it dry it, smear Sunflower oil all over it, inside and outside and then make a big ball of newspapers and put it in the pot, put the lid on (it prevents rust if you live at the coast) and then voila! your pot is ready

  4. A number of ways.

    I have always done it by cooking Mielie Meal in it and then chucking the Mielie Meal away after cleaning it all out with steel wool and repeating the entire process (ie cooking the mm and cleaning) 4 times.

    Then it is ready for use.

    Always have a light layer of cooking oil on and around the pot when it is not in use - to prevent it from rusting etc.
