How do I delete my instant messaging name and my 360 name?

You can edit the display name for your 360 page under the "settings" option (top right of your page).

The only way I know of for you to delete your IM name is to delete your entire account. There may be a less drastic option though. You might want to check the FAQ before you go so far as to close your account.
