  1. You need a mix of weight training and cardio.  Cardio is essential to burn off excess body fat which hides muscle definition.  You should focus on cutting your body fat % rather than reducing your weight.  Your body composition is more important since muscle weighs more than fat.

    If you want to be extreme, check out Beachbody.com's P90X program.  It's awesome and I can vouch that you'll see great results.  It also comes with a nutrition guide that you follow along side the workouts.  It tells you want to eat, how much to eat based on your body weight and body fat % and how often to eat.  It even has recipes for all the foods and an alternative "block" method (such as 8 blocks proteins, 2 blocks fat, 3 blocks carbs, etc).  So you don't HAVE to follow their recipes exactly.
