How do I keep Red Icing from being Bitter?

I once attended a wedding some years ago where the cake was made of red icing but it wasn't bitter at all, in fact, it was really sweet! That's been a first for me, because every cake with red icing, even the cakes from the bakery, are so bitter!

The cake was made by the bride's aunt, and unfortunately I don't know the recipe. Does anyone know what she might have done, or have any tricks to making really red red icing without making it bitter?

  2. I use no-taste wilton gel based food color. Try it! it's not bitter. I used to have problems with red icing, too until someone gave me that no-taste red food color.

  3. I expect she just added red food coloring to a buttercream icing.

  4. if the red food coloring makes it bitter, try adding some powdered sugar or maybe even some cornsyrup.

  5. She might have added the red colouring to butter cream icing or it might be the type of colouring your using you could try a different one.
