Question:

How do I keep my potatoes firm?

Every time I make potato salad my potatoes get mushy. I've tried rinsing in cold water, boiling with the skins on, even freezing them, but no matter what I try they turn to mush when I start stirring everything in. Got any tips that I don't know about?

  1. You need to get the correct type of potato.

    As I don't know your brands, and types all I can say is for you to ask for 'salad type' potatoes.

    It sounds like you are using 'mashers'.

    Or are you trying to firm up someone else's potatoes?

  4. dont boil them so long

    take out as soon as fork goes thru them

  5. ~~use thin-skinned potatoes, like "new" or red potatoes, or Yukon Golds.  

    ~~You may also want to be sure they are not over-cooked.  Boil cubes about 15 min., then leave in colander and cover w/ a clean dish towel for 15 minutes to steam.

    ~~I also mix up my dressing in a separate bowl, then pou rit over the potatoes, rather than just dumping in mayo, mustard, pickle relish, whatever onto the ptoatoes.  You have to mix them more when you do that, and risk mushing them.
