They've all taken on a light green color -- like Kermit's skin or something -- and don't seem to be turning that darker green you might expect. Please advise.

  1. you can pick them . there are different colors of bell peppers. red, orange, yellow and green. how big are they? are they big enough to pick. i have a garden and i just picked some peppers yesterday.

  2. Bell peppers can be picked when very small, or picked when very large. The size is your choice. The edibility will be the same.

If you wait until they change colors, then they may be past prime.

Light green color usually indicates a lack of fertilizer. Peppers are heavy feeders and should be fertilized whenever they start to change to light green.

  3. Pick one and try it.  You can pick and eat bell peppers anytime.  Depending on  the variety they can turn red, yellow, orange, purple or black.  Not many stay green when they are ripe, but they they are all definitely milder and sweeter when they are ripe.
