How do I make Chicken Fried Rice? What spices do they use in the restaurants?

I know that a lot of recipes call for soy sauce as the seasoning, but when I went to a Japanese Steak House, they had other seasonings that they added to the rice, any idea what they were?

  1. Oyster sauce? Chicken broth? Orange juice? All I know is that you start with cold, refrigerated cooked rice.


  2. Day old cooked rice

    Can chicken broth (if necessary depends how dry your cold rice is)

    Little vegetable oil to coat wok or deep fry pan

    Two eggs

    Cut up raw chicken marinade in soy sauce or oyster sauce.

    1/2 chopped white onion

    Cooked Peas

    Soy sauce

    Oyster sauce (optional but it's tasty)

    Little salt

    Little white pepper

    Shelled Peanuts or cashews (optional)

    Heat oil and scramble eggs in it.  Set eggs aside.

    Add a little more oil if necessary and when pot is hot again, toss fry onion, chicken (include marinade) then add nuts, toss about a minute. until chicken is 90 percent cooked.

    On medium heat:  Add day-old rice to hot mixture and stir fry  until rice gets soft.  If necessary, add a little bit of chicken broth to moisten. If it sticks, add little oil to pan.  Continue to toss ingredients so rice doesn't burn in pan.  Add the scrambled eggs and peas and choice of seasoning toss a little more..

    The restaurant might use mono-sodium glutamate which enhances the flavor but actually, it's not that good for you and not recommended.
