How do I make Shortbread Soft?

Some shortbread comes out hard and crunchy, others are soft and doughy. I want the latter. What factors affect this? How much butter? How long you cook it?

  1. shortbread is supposed to be hard and crumbly... you want to make sugar cookies.

    try margarine instead of butter....


  2. INGREDIENTS (serves 4-6)

    1 cup soft butter

    1 cup flour

    1/2 cup corn starch

    1/2 cup icing sugar

    1 tsp vanilla

    PROCEDURE

    (1) Preheat oven to 325 deg. F.

    (2) Beat butter and vanilla until foamy.

    (3) Add dry ingredients and blend. Do not overstir.

    (4) Spoon onto an ungreased pan.

    (5) Bake at 325 deg. F until done (10-20 minutes

    depending on thickness


  3. If it is hard and crunchy it was over baked or it is old!! If shortbread sits in a non airtight container it will get hard and crunchy. If it is baked too long it gets hard and crunchy.

  5. Shortbread is supposed to be harder (but not rock-hard, like biscotti).  If it's soft and doughy, it hasn't been cooked long enough....  Just make some puffy sugar cookies instead
