How do I make a good bar-b-que sauce?

I don't want to use the sauce straight from the bottle. Are there any recipes for making or mixing ingredients to make a superb sauce?

  1. · 2 tablespoons Olive Oil

    · 2 tablespoons chopped onion

    · 2 cloves garlic, minced

    · 1 cup water

    · 2 Cans tomato paste

    · 1 teaspoon sea salt

    · 1 teaspoon black pepper

    · 1 teaspoon celery seed

    · 2 tablespoons brown sugar

    · 2 teaspoons lemon juice

    · ½ cup Apple Cider Vinegar

    · 2 Tablespoon s Worcestershire

    · 1 tablespoon Tabasco Sauce or 1 tablespoon cayenne pepper

    · 2 oranges, sliced into half moons

    · 1 Can pineapple chunks

    · 1 Can Bing Cherries (not pie filling)

    · 3 good sized Yellow Peppers cut into chunks

    In a saucepan, heat oil and cook onion until tender.  Stir in minced garlic and cook for 30 seconds.  Stir in water, vinegar, tomato paste, brown sugar and lemon juice.  Transfer to a large kettle or Dutch oven and add other ingredients.  Simmer on LOW heat for up to 8 hours (or more if desired), adding measured cup of water every hour.  When cooked to taste, strain out pineapple, cherries and peppers.


  2. Easy and very Texan:

    two cups ketchup

    three tablespoons or more brown sugar

    one tablespoon dry mustard

    two tablespoons Wistershire Sauce

    fry four slices of bacon

    Take out the bacon and crumble.

    In the bacon fat fry a finely chopped  onion

    Put in the ketchup, brown sugar, bacon bits, Wistishire Sauce and mustard.

    You can add a little bit of smoked salt if you have it, but be careful because it's really salty.

    and let cook for a while. Add sugar to taste.

    Tataaaaa! its done.
