  1. This is what I make all the time so good

    1 pint heavy cream  

    1 stick (1/2 cup) butter  

    2 tablespoons cream cheese  

    1/2 - 3/4 cup Parmesan cheese  

    1 teaspoon garlic powder, add in more to suit your taste if you prefer

    Salt and pepper, to taste

    In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and garlic powder. Simmer this for 15 - 20 minutes over low heat.


  2. Real Alfredo does NOT have garlic in it as an ingredient. Garlic was added as an ingredient here in the US - the true Italian method has never included garlic - here's an authentic version that many restaurants still use today...

    1/2 LB Fettuccine noodles cooked al dente

    1 tbsp salted Butter

    1 cup Heavy Cream

    2 Egg Yolks

    1/2 cup shredded Reggiano Parmisano cheese

    1/2 cup grated Romano cheese

    1/2 tsp fresh cracked Black Pepper

    1/4 tsp ground White Pepper

    1/4 tsp freshly grated Nutmeg

    Sea Salt to taste

    1 tsp fresh chopped Italian Parsely (flat leaf parsely)

    Beat the egg yolks set aside - in a saute pan over med high heat melt the butter - add the cream - stir - bring up to a simmer - add 1/2 LB of al dente Fettuccine pasta - stir - bring to a simmer - reduce heat to medium - add the egg yolks and stir - black & white pepper - add the cheeses - stir until the cheese is melting and being thoroughly incorporated - add the nutmeg - stir - add the salt to taste and serve - add the parsely

  3. I make this all the time and have always received rave reviews.  I'm not sure if these are the exact measurements b/c I've made it so long I just eyeball it.  I think it's close though.

    Melt 3/4 stick butter in a saucepot.  Add 3-4 minced garlic cloves (fresh is better than the preminced bottled stuff), saute until just golden.  Careful not to burn!  Add 1/2-3/4 cup white wine, reduce by half.  Add 2 small cartons whipping (sometimes called heavy) cream, reduce by half.  Take off heat and let cool slightly, then add 1 cup grated parmesan cheese (the real stuff, not the powder!).  If you add the cheese too soon it will get gloppy and stick to the pan.  Pour the sauce over 1/2-3/4 pound of cooked pasta (I like angel hair).

    You can add mushrooms in at the butter/garlic stage, and cooked shrimp when you take it off the heat, if you like.  It's also delicious with chicken.  This is definitely not figure friendly but SO GOOD!

    1 cup heavy cream

    1 clove garlic, crushed

    1 1/2 cups freshly grated Parmesan cheese

    1/4 cup chopped fresh parsley

    DIRECTIONS

    Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.
