How do I make cookies flatten out?

I am baking "test" cookies at work that are really high in fiber. I'm not a professional baker or anything so I sometimes don't know what I'm doing. The cookies always end up really hard and when I roll and bake them, they end up not changing shape. As in they either stay completely flat and hard when I flatten them before hand, or they stay in a rounded ball shape and don't flatten out like cookies should.

Is there anything I could add or do differently to make these cookies flatten out and stay softer?

  1. Butter will make cookies flatter, but harder.  Crisco will make softer cookies, but they won't be as flat. ....  You might be overworking your flour, if they're tough.  And, if you're using butter, it should always be UNsalted butter.....


  2. it sounds like you are making a rolled cookie, try rolling them thinner and using a round cutter to cut them out or a glass will work, bake them for a shorter amount of time them needed, when they are colled add them to a air tight container with a slice of white bread, this will keep the, soft

  3. Try adding less flour. If there is flour in your dough.


  4. You need to up the fat content to get them to flatten out. When the flat melts the cookies will fall too.

    If you are making really high fiber cookies this may be hard to do.  Most high fiber baked goods have a more "cakey" texture than "chewy"

    You may want to experiment with the type of fat you are using.
