How do I make hot pepper mash (thai dragon peppers) so I can make hot sauce?

My plant is overflowing with peppers which I want to use. I also have many banana peppers I could use. I've read that the best hot sauce starts with a mash.

  1. you should let it ferment and then distill it.  i've never had hot pepper liquor.  i bet you could export the **** out of it to thailand, cambodia, and the phillipines.


  2. Just find out on the Sizzlin Sauces website.  They do that.  

  3. The way I make my own sauce is:

    1 wash and cut up fresh peppers

    2 place in a blender with vinegar and salt

    3 blend the lot

    if the peppers are dried, it's better as there'll be no water in the sauce.

    to make it like they do tabasco, place peppers under salt in oak barrels for three years then do the above.
