  1. This is a really light beer batter, by light I mean it's almost like a tempura batter, and it's sooooooooo good.  You can change out the chili powder, salt and pepper for other spices, I use an exotic salt blend.  I've used this on chicken too.

    Beer Batter

    1 cup all-purpose flour

    1/4 teaspoon salt

    1/8 teaspoon black pepper

    1/2 teaspoon chili powder

    1/2 teaspoon baking powder

    1 cup beer

    1 egg, separated

    1 1/2 quarts vegetable oil

    salt to taste

    1.  In medium bowl, mix flour, salt, pepper, chili powder and baking powder.  In separate bowl, whisk together beer and egg yolk.

    2.  Using clean wisk, whip egg whites until soft peaks form (I used my hand mixer, think smarter not harder.)  Heat oil to 365 degrees.

    3.  Stir beer and yolk mixture into flour mixture until just blended.  Fold in egg whites.

    4. Coat your food in batter

    5.  Fry food in batches stir batter between batches.

  2. slice onions thick

coat in beer batter (mix 1 cup all-purpose flour 1 egg, beaten 1 teaspoon garlic powder 1/2 teaspoon ground black pepper 1 1/2 cups beer)

or just into heavily seasoned flour

    then deep fry until crispy

  3. Fat Ronnie's Fried Onion Rings

    2 cups. Flour

    1½ tsp. Salt

    1 tsp. Ground Pepper

    ½ tsp. Baking Powder

    1 cup Buttermilk

1 Large Sweet Onion (sliced 1/2" wide)

    Vegetable Oil for Deep Frying

Place buttermilk in one bowl and set aside. Mix flour, salt, pepper, and baking powder in separate bowl. Heat oil at 375ºF for frying.

Dredge onion rings in flour mixture first, then dip in butter milk and then coat with flour mixture again. Place onion rings in hot oil and do not crowd onion rings. When onion rings are golden brown remove from oil and drain. More salt may be added to your taste.  These were traditionally served in a brown paper bag from the Topeka, KS, location.

  4. Beer-Battered Onion Rings

    2 cups all-purpose flour

    1 egg, beaten

    2 teaspoons dried parsley

    2 teaspoons garlic powder

    2 teaspoons dried oregano

    salt and pepper to taste

    1 cup beer

3 large onions, sliced into rings

    1 cup oil for frying

    DIRECTIONS

In a shallow bowl combine flour, egg, parsley, garlic powder, oregano, salt and pepper. Gradually add beer, stirring, until a thick batter forms. Add more or less beer depending on the desired consistency of the batter.

In a heavy frying pan heat oil (adjust amount, depending on the size of your pan, so that you have a couple of inches of oil) over medium-high heat. When oil is hot, dip onions in batter and fry, turning once to brown evenly on both sides. Drain on paper towels.

    Old Fashioned Onion Rings

    INGREDIENTS:

1 large onion, cut into 1/4 inch

    slices

    1 1/4 cups all-purpose flour

    1 teaspoon baking powder

    1 teaspoon salt

1 egg 1 cup milk, or as needed

    3/4 cup dry bread crumbs

    seasoned salt to taste

1 quart oil for frying, or as

    needed

    DIRECTIONS:

    1. Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).

    2. Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.

    3. Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.

    4. Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.
