How do I make tarragon vinegar; can I do it quickly?

I need some tarragon vinegar for a recipe I would like to try but have been unable to find any in the local supermarket. Can I use the dried tarragon in my cupboard with some white wine vinegar? Would this work and if so how long would I need to leave it?

  1. Fresh tarragon twigs would be better. You would have to immerse the tarragon for about 3 weeks in the vinegar. If you use dried tarragon, you'll have to strain the vinegar before using it.


  2. Tarragon Vinegar Recipe

    Ingredients:

    Tarragon leaves, washed, drained and roughly chopped (about 3 good handfuls)

    1 pint (570 ml) white wine vinegar or distilled white malt vinegar

    Method:

    Put the tarragon into a wide-mouthed sterilized jar and pour over the cold vinegar.

    Cover tightly and leave to stand in a sunny place for 3 to 4 weeks, shaking occasionally.

    Strain through muslin, pour into a sterilized bottle, adding a fresh spray of tarragon to the bottle, and seal.

    Makes about 1 pint (570 ml) of Tarragon Vinegar.

    Sorry there's no quick way of doing it.
