How do I plan for dinner?

My godmother will be coming over Monday night for her belated birthday. And my grandfather will be coming to. So I got both the guests confirmed, and I'm planning to cook something. Maybe pasta, or some sort of meat dish, or whatever. And I'm in charge of the whole evening. I already have guests confirmed, and what I'm going to cook, but I've never been in charge by myself.

  1. prep what you can in advance - have in "oven ready" so you can spend more time with your guests

With family, you don't want the dinner to be to stuffy.  Remember, the food you cook and how you serve it sets the tone for the dinner.  You may want to do an angel hair pasta dressed simply with some olive oil and Parmesan cheese.  Serve that with a nice piece of sauteed chicken or fish with a pesto or tomato (lite) sauce.  You can do a salad or fresh green beans and garlic bread or rolls.

    Start with an appetizer of maybe fruit and cheese and end with a decadent (store bought) dessert.  Wine to accompany each course would be great.  

    With the main dish, drop your pasta as soon as the guests arrive and serve appetizers.  Cook your meat until it is just under done and finish it right before service.  With your apps and dessert from the store, service should be a breeze.  Good luck, kiddo!
