They are a delicacy in some countries so I would like to try it.My area is overrun with them and I catch about two per week. It seems a pity to waste the meat with food getting more expensive now. I could skin them as well for the fur and make natural history exhibits out of the skeletons. They have been killed in a spring trap, not poison so they should be safe to eat after cooking
