How do I record gameplay videos of just what is on the screen.?

I don't want to use a video camera. On youtube and gaming sites you see videos of just what is on the screen and nothing else. What do I use to do that? Is it a device or software? Is it cheap and easy?

There are some screen recording applications for Mac, such as Snapz Pro X (Mac)http://www.ambrosiasw.com/utilities/snap... iShowU (Mac - Tiger or Leopard), Screenflow (Mac). I don't have a Mac. Some screen recorder like DemoCreator(http://www.sameshow.com/demo-creator.htm... is just right for application video tutorial recording.
