How do I restaurants decide where to get their pastries from?

i'm a student at a university and i'm also the world's best cheesecake maker, and i want to pitch my idea of selling my own cheesecake at the university cafes. How do restaurants decide where to get their pastries from and am I being to ambitious?

  1. look at sweetstreet.com they are one of the most popular providers for desserts and pastries to restaurants.  


  2. Fine Dining Restaurants have culinary grads in their pastry department.

    Chain places have their pastry choices decided from the corporate offices. If you know one of them, you can probably get them to start buying from you.

    You can probably get in with a mom & pop place. If you have a quality product at a decent price you may have something going for you.
