Your surveillance camera will have two, possibly three inputs.  If there's no sound, then the red and black are for power and the yellow carries the video.  The yellow is actually two wires in 1 cable.

If there's sound, then the red carries the sound (again, two wires in 1 cable), yellow the video and black the power.

Most likely though:

red = positive

black = negative

yellow = video cable.
