How do I serve corned beef & cabbage as a finger food at a party? Trying to avoid the balance the plate act.?

  1. Like the others, I like this idea!  You could even make small open-faced sandwiches on party rye slices.


  2. Make Ruben sandwiches!  There is no way to make traditional corned beef and cabbage workable finger food!

  3. To expand on Butterfly Lover.....  Make the Reuben sandwiches into WRAPS...  You could even cut the wraps into 2-3" pieces

  4. Stuff the ingredients into individual "hot pocket" type sandwiches, using refrigerater rolls that have been rolled out some.  Use one roll for the bottom, put your ingredients (chopped) on top and then top with another roll.  Pinch the two sides of the two rolls together and bake at the temperature on the package.  Don't put too much filling in, though, or you'll defeat the purpose!

  5. The answer to party food is always the same (for me)...

    GOLD OR SILVER FRILL PICKS !!!

    Skewer cubes of corned beef with strips of boiled cabbage around them. Serve with bowls of horseradish/sour cream dip and a couple styles of mustard (I would go with a sweet and a whole seed type) Serve in a Fancy-schmancy chafing dish with a little of the 'au jus' in it so they don't get dried out and some dilled baby carrots as a side (quickly blanch, plunge in ice water, drain and toss with EV olive oil and dill)

    PS, I laughed about your question until I gave it the "HMMM"...I am sure this is a great idea now and can envision your guests surprise and amusement. I wonder if its been done?

    wrap the beef inside the cabbage and fix w/ a tooth pick...

  7. What if you did a "pigs in a blanket" thing.  

    You could take refrigerated croissant or other biscuit dough (or if you you are up for it, make some Irish Soda bread), roll it thin and into strips.  Take a small (1 1/2" or so) strip of corned beef and put a small bit of cabbage on top and roll up.  Brush with a bit of butter or egg wash and bake at 350 degrees F until golden brown.  skewer with a  toothpick and tadaa! done.

    I dont even like corned beef and cabbage--but i might make this for my friends. :)
