How do I set my playstation3 to run games in 1080p?

I have GTA4 and Call of Duty 4 and on the back of the case says it supports 720p and 1080p but they only run in 720p.

I know my TV supports 1080p coz my Blue ray movies play in that resolution but my games dont, WHY?? =(

I have HDMI cables and my tv is a Sharp Aquos.
