For the free classic Yahoo Mail, a group of contacts is called a category.  Here is the link to the Yahoo Mail help page that shows you how to create, edit or delete a category.

If you are using Outlook Express, the group of contacts is called a group.  Open OE, click Tools>Address Book>New>New Group.  After that, it is pretty much self-explanatory.

For both of the above, you should make the name of the group "Undisclosed Recipients".
