I have a couple zucchini and yellow squash that I just picked. But I won't get around to eating them the next couple days. How do I store them? Do I wash them off first or before I use them? Do I leave them on the counter or do I put them in the fridge?

  1. They will hold a week washed and put in the fridge..no problem here

May I add if you have squash plants that are growing you will soon have more squash than you can store simply in the fridge..You must then blanch them and freeze them in baggies..so you are not blanching a few every day..save them in a fridge and blanch some every 3 or 4 days...here is a pictorial and step by step method on how to do this..

  2. a couple days will be fine if you just put them in a basket on the counter....i wouldn't wash them because if they don't dry completly then they will mold and go bad....i would take a dry cloth and wipe them down for excess dirt...they will also sometimes get harder when placed in the fridge...i recommend the counter. where they can breathe. if they are fresh they will be fine for at least 4 days.
