Obviously this is my first time using one...

It's reversible so you have the option two cook on both sides. The only instructions it gives is: Do not overheat.

What I need to know is how to heat it.

  1. you can actually use it on the top of the stove over medium to medium high heat.  Should work with Gas or Electric either one.  Another way to season it, if it's cast iron, is to use bacon grease and repeat the method above.

  2. Place it on the grill and use a medium heat. You want the griddle to be well-seasoned with oil before using it. Pre-heat the griddle to about 300°F in an oven, then wipe on a thin layer of shortening or coconut oil, and let stand for 2 minutes. Repeat until the surface is slick.

When grilling, it is at the correct temperature, about 375°F, when a few drops of water dance for a few seconds before vaporizing. The griddle should never get hot enough to smoke.
