How do airlines prepare their plane food?

do they outsource to catering companies? or do they really have a separate f&b department for their food? or do they just buy the food from the airports?

Caterers are awarded contracts and prepare the food in local kitchens, then deliver it to your awaiting plane. Preserving freshness is a particular challenge because your meal may have been prepared eight hours prior to the time it's served to you inflight.

There is also Gate Gourmet

For those of us who travel cattle class those little paper trays of goop are prepared by outside caterers, delivered sealed and ready to heat up on board.

Of course, if you are a CEO or politician you will get some real food prepared in the galley.
