They may be long and thin, exposing the maximum amount of skin to the cooling air. They generally have larger appendages for the same reason. Compare Jackrabbits and Arctic hares, for example.

There are behavioral changes too. They might be active only at dusk and dawn or during the night. They may spend more time in the water. It all depends on the animal.
