  1. The food they eat contains a lot of protein so the only way to get rid of it is to make eggs.

  2. What happens is that as one eggs is ready to be laid, there are other smaller eggs developing inside the chicken.   When the egg is laid, another is almost ready to by laid in the next day or so.

  3. First you have to understand how chickens reproduce.

They must hatch several chicks at a time (their lifespans are so short and young chicks succumb to death so easily that if they only had one at a time, chickens would die off very quickly), but their bodies can't lay eggs all at once. So, the hen lays about one a day until she has a full 'clutch' of eggs that she can hatch. Once the hen believes that the clutch is full (number will vary a little from hen to hen), she will become broody and start sitting on the eggs in an attempt to hatch them. While she is broody, she will not hatch any eggs.

Now, everyday your chickens lay eggs. And everyday, you take their eggs away. So, when the chickens return to their laying spot and they see no eggs, they think that the clutch does not have enough eggs, so they lay another one. And then another the next day. And so on and so forth. Removing their eggs is pretty much a way of tricking their natural instincts.

But this is even more importantly: hens have specifically been bred to lay eggs. That was their purpose; farmers only ever saved and bred the hens that laid a lot of eggs, so their offspring would lay a lot, and so on and so forth until nowadays, when hens lay tons of eggs!
