How do i categorize ipod files?

Question

How can i, for example move a music video into the music videos category, and can i make folders in the ipod and put stuff in them? e.g. all episodes i have of the simpsons into a folder called simpsons?

Right click on the music video > get info > video > music video.

As for categorizing t.v. shows, not possible, they can only be under t.v. shows. Sorry. =\
