there is a bar on the left side of you itunes and at the bottom there is a list of playlist and if you right click you can chose "rename" and click that and type in the name that you want it to be then plug in you ipod and it will change it on there.

you can't rename a playlist using your ipod, you have to plug it into your computer and change the playlist in itunes
