then go to your profile and choose the one you want for your default avatar

what do you mean exactly? because the only place you can get your avatar is on your email, and you get your avatar on your email by clicking the silhouette of a person in a gray box next to the place where it tells you how many emails you have. When you click on it, choose if you want male or female, and then you will have your avatar.
