  1. grate the rind from a fresh orange, that is the process of getting the zest.

    it is also applicable to all kinds of citrus

The best technique is a microplane grater.  If you don't happen to have one of those, or a zester (which is this tool with a little row of sharp circles that scrap off the zest), then using a paring knife cut very thin strips of skin, that remove just the outside, very orange, part of the orange skin and not any of the white, pithy, part of the orange skin.  Then, being very patient and detailed, stack up the thin strips and cut them crosswize into very small slivers.  And then crosswise again into very small, teeny-tiny pieces.  If you want the pieces smaller still, rock a chefs knife back and forth over the pile.  Congratulations for gaining a new knife skill!

  5. My sister bought me a neat gadget from the US, called a "microplane".  It's absolutely fantastic!  We all love this at home, we use it for citrus, ginger, fresh nutmeg....

    You just gently slide it on the outside of the orange, and voila --you get zest!  Just do it gently, the white part under the zest is bitter.
