  1. If it's over 1-1/2 lbs., then it could very easily need to cook longer.  I cook mine at 375; so yours may not be at a high enough temp either.   When you take it out, let it sit about 10-15 min before you slice it.  That will let it "set" and harden a bit before you slice it.......

  2. No, no no, never base how long you cook it on the suggested duration... all that matters is the INTERNAL TEMPERATURE.   Get a meat probe or a quick read thermometer.  Insert it to the middle or thickest part of the item.

If it reads at LEAST 160 F, it should be done.

EDIT: Below is a list of temperatures for various meat products.  Also, as seen below, 100F is not hot enough for cooking a raw meat product prior to consumption. This temperature is within the danger zone which is the ideal temperature for bacterial growth.

  3. If it is in a 9x5-inch loaf shape, you should remove now. 1 hour is the time for this size.

  4. I use a standard loaf pan which holds about 1 1/2 lbs. of ground meat and bake at 350F for 1 1/2 hours.

  5. It sounds like you have put too much liquid into the meatloaf.  I don't know your recipe, but I used to put a small can of tomato sauce in mine and it was always mushy.  I used the recipe from the Quaker oats box, but used the tomato sauce since I didn't have tomato juice.  If the ground meat is no longer red or pink, it should be done.

  6. Use a meat thermometer. When the internal temperature reaches 100F it should be cooked.

  7. cut it in half to see if its cooked all the way through.

it all depends on how much meat you use... i use 1.5-2lbs and cook it for at least 1.5 hours.  Wehn I think its done I cook it for another 15 minutes just to be safe.
