  1. jalapeno's actually turn red when really ripe, but they lose their spiciness.  When you see darker color developing, it'll be a good time to pick them.  or just wait until they are 3 inches long.


  2. i guess it depends on how hot you want them.. the sooner you pick the hotter they are they longer you take the less spicy they get.. i dont like mine too hot so i wait until they are almost maroon
