How do i make good nacho cheese sauce?

I'm from UK and would love to know how to make some quality nacho cheese. it generally sucks over here compared to USA. What type of cheese should I use, because every time it tastes like plastic.

  1. In the UK you can use Mozzarella, which is beautifully stringy, and Edam, which gives it a bit of flavour.  

    Basically you need to get both the flavour and the consistency right.  I have to say I don't like nacho cheese sauce made with flour because I think it interferes with both the flavour and the consistency.

    This is how I do it:

    Grate some Edam and some Mozzarella

    Melt 1 teaspoon of butter in a pan.

    Add a little milk (half a mug full).

    Add the grated cheese and stir.

    Bring to the boil.  Keep stirring or the cheese will stick to the bottom of the pan.

    Add some finely chopped chillies or some chilli powder - you have to decide how hot you want it!

    Add any other ingredients you want - some people like onion or garlic, but I prefer to keep it simple.

    Keep it simmering for another five to ten minutes.

    Now it’s ready to eat!  Bear in mind it will be extremely hot right out of the pan.

    If you want to chop fresh chillies, I recommend wearing latex gloves to keep the capsaicin off your hands (especially helpful for men, who use their hands for…well… having a pee - you don’t want to get chilli juice on your willie.)

    Alternatively you can chop pickled jalapenos - the kind you get in a bottle.  Not nearly so dangerous to your hands (or anywhere else).


  2. Why not skip the nacho cheese sauce & just make some wonderful & authentic nachos?

    Here's the way I do them.  I hope you'll try them and enjoy them too!  Way better than the fake cheese stuff!

    Nachos, Red Onion Restaurant Style

    1 ba Restaurant Style Tortilla Chips (unsalted kind)

    1 cup shredded Monterey Jack cheese

    1 cup shredded cheddar cheese

    ¼ cup nacho jalapeno chiles (or slice up whole pickled jalapenos)

    1 cup refried beans

    1 cup finely diced tomatoes

    1 cup finely chopped cilantro

    Arrange tortilla chips in a single layer on a large ovenproof platter.  Sprinkle half the Jack & cheddar cheeses over chips.  Sprinkle chiles over cheeses.  Top with dollops of refried beans.  Sprinkle with half the remaining cheeses.  Tope with tomatoes & cilantro, then with remaining cheeses.  Bake at 375 degrees until cheese is melted & bubbly, about 15 minutes.

    Serve at once with sour cream, salsa and guacamole, if desired.


  3. Well in the US, you can melt Velveeta[i don't know if you have that in the UK], then normally I put chopped up tomatoes and peppers in it.

  4. NACHO CHEESE SAUCE

    1 lb. hamburger

    1 lb. sausage

    1 box Velveeta cheese

    1 sm. can El Rio tomato and jalapeno sauce (optional)

    Nachos

    Fry meats and drain. Melt cheese and mix together. Use as dip for Nacho's.

    NACHO CHEESE SAUCE  

    1/4 c. chopped green pepper

    1/4 c. chopped red pepper

    4 to 5 cloves garlic, minced

    2 scallions, minced

    1 tbsp. olive oil

    2 tbsp. butter

    2 tbsp. flour

    1 1/2 cups milk

    1 c. cheddar cheese, shredded

    1/4 teaspoon Tabasco sauce

    2 tbsp. minced jalapeno peppers

    1/4 teaspoon salt

    Pinch cayenne pepper

    1/4 teaspoon paprika

    nacho corn chips

    Mix together peppers, olive oil, garlic and butter in a saucepan.

    Sprinkle in flour, pour in milk and stir until mixture simmers -- do not allow to boil. When mixture begins to thicken, stir in the cheese and remaining ingredients, Simmer on low heat an additional five minutes or until cheese is fully melted.

    Serve with nacho chips.




  6. in the u.s. we have the cheese sauce for the nachos already made, and then you buy a jar of salsa, and then you combine them, yummy!

  7. 2 tablespoons butter

    2 tablespoons flour

    1/2 teaspoon salt

    1/4 teaspoon white pepper

    1/4 teaspoon paprika -- or chili powder

    1 cup milk

    1 cup shredded cheddar cheese or shredded Mexican 4 blend cheese

    1/4 teaspoon ground cumin

    3 drops Tabasco sauce or to taste

    In a heavy 2-quart saucepan over low heat, melt butter.

    Add flour, salt, pepper and paprika or chili powder to melted butter. Stir together over low heat until smooth.

    Gradually stir in milk; cook, stirring constantly, until thickened and smooth. Stir the shredded cheese, ground cumin and Tabasco into the hot white sauce. Cook over very low heat, stirring constantly, just until the cheese is melted.   Serve over tortilla chips for easy nachos

  8. If I ever make nacho cheese I use Velveeta and Rotel.  The only other time I eat nachos might be at a baseball game or something, and that stuff comes in a can. You could search some recipes! I will give you one.

If it tastes like plastic, that's because you're using processed cheese, or "cheese food".  Use REAL shredded Cheddar cheese .....  Make a white sauce of flour and milk;  add some chili powder, salt and pepper, and then add the grated cheese to the white sauce and stir until melted.....  Fresh chopped cilantro is good on top;  and sliced jalapenos
