  2. Raspberry Swirl Cookies!

    1/2 cup butter, softened

    1 cup granulated sugar

    1 egg

    1 teaspoon vanilla extract

    2 cups all-purpose flour

    1 teaspoon baking powder

    1/4 teaspoon salt

    Raspberry Filling

    Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add egg and vanilla extract; beat well. Combine flour, baking powder, and salt; add to creamed mixture, beating well. Shape dough into a ball; wrap in plastic wrap, and chill for two hours.

    Meanwhile, prepare Raspberry Filling.

    On floured wax paper, roll dough to a 12 x 9-inch rectangle. Spread Raspberry Filling evenly to within 1/4 inch of edges. Carefully roll dough, jellyroll fashion, starting at long end and peeling wax paper from dough as you roll. Pinch side seam to seal (leave ends open). Wrap dough in plastic wrap. Chill for one hour or until dough is firm.

    Unwrap roll and cut into 1/4-inch slices. Place 2 inches apart on greased cookie sheets. Bake at 375 degrees F for 8 to 10 minutes or just until cookies begin to brown around edges. Cool on wire racks.

    Raspberry Filling

    1/2 cup raspberry jam

    1/2 cup flaked coconut

    1/4 cup finely chopped walnuts

    Combine all ingredients; stir well.


  3. Double Choc Chip Cookies

    I love this recipe! It just melts in your mouth!

    Makes 16

    Ingredients

        * 125g unsalted butter, softened

        * 1 1/4 cups (250g) firmly packed brown sugar

        * 1 tsp vanilla extract

        * 1 egg

        * 1 1/2 cups (225g) plain flour

        * 1/2 tsp baking powder

        * 100g good-quality dark chocolate chips

        * 100g white chocolate chips

    Method

    1. Preheat the oven to 180°C. Line a baking tray with baking paper.



    2. Place butter and sugar in a bowl and beat with an electric mixer until pale. Add vanilla and egg and continue to beat until just combined. Sift in the flour, baking powder and a pinch of salt then fold in. Stir through chunks of chocolate.

      

    3. Place tablespoonfuls of mixture 4-5cm apart on the tray. Bake for 15-20 minutes until golden. Remove from oven and allow to cool a little before removing to a wire rack to cool completely. Serve with glasses of milk.


  4. Cinnamon Cookies --

    INGREDIENTS

    1 cup butter, softened

    1 1/2 cups white sugar

    1 egg

    1 1/2 tablespoons molasses

    2 1/4 cups all-purpose flour

    1 1/8 teaspoons baking soda

    1 tablespoon ground cinnamon

    DIRECTIONS

    Preheat oven to 350 degrees F (180 degrees C).

    Cream together butter and sugar.

    Mix in egg and molasses, blending well.

    Mix flour, baking soda and cinnamon; add to creamed mixture, mixing well.

    Drop by teaspoonfuls onto ungreased cookie sheet.

    Bake for 10 to 12 minutes.
