I think you are talking about the actual documents.

It kind of depends upon the program you're using, but in general, go to the format menu. You can then look for font, font colors, font attributes, etc.

Strikethrough, all you have to use is putting your words in the middle of <strike></strike>..

Change color is <font color="red"></font> or whatever color you want, filling in for the color.

For both, you just type in between them.
