How do i make my lettuce less bitter?

i am growing romaine lettuce and it is very bitter because of the heat. is there a way to make it less bitter?

Put it on a juicy hamburger and you won't taste the bitterness.

Cover with a tinted glass

This will allow the light to feed it and the suv will not be so harsh.

Pick it when it's still "baby" lettuce ... Even if the stem area is bitter, the leaves shouldn't be (cut the stem out of the center of the leaf)

For starters, you can harvest it early in the morning (sugar content is at its highest then) you can also wilt it in olive oil and add a sweet dressing (balsamic rosemary is my fave)
