  1. usually, bread can be made with just flour, water, and yeast, so any simple "classic" bread recipes would do.


  2. Quick French Bread -- Vegan

    INGREDIENTS

    3 1/2 cups warm water

    2 T margarine

    3 T sugar

    1 T salt

    2 T baking yeast

    9 cups white flour

    METHOD

    Mix water, margarine, sugar and salt. Sprinkle yeast on top an let rest for 10 minutes. Whip in 7 cups of flour, then beat in the rest with a spoon. Do not knead. Let rise until double.

    Punch down and separate into two balls. Flatten each ball into a rectangular shape, then roll into a long loaf. Let them rise on an oiled cookie sheet until almost double.

    Put a pan of boiling water on the bottom of a 205C/400F oven and bake. After 15 minutes, reduce heat to 180C/350F for about 30 minutes. 5 minutes before bread is done, brush loaves with melted margarine.

    Wholewheat Brown Bread (Yeast Free)

    INGREDIENTS

    550 grams / 1.2 pounds wholewheat flour

    125 grams / 4 1/2 ounces plain flour

    110 grams / 4 ounces porridge oats

    95 grams / 3 ounces bran

    225 grams / 1/2 pound pinhead oatmeal

    60 grams / 2 ounces wheatgerm

    1/2 teaspoon baking powder

    1/2 teaspoon salt

    1.15 liters / 2 1/2 pints soy milk

    2 egg replacers

    METHOD

    Mix all the dry ingredients together. Mix the egg replacers and soy milk, and add to the dry ingredients. Spoon into two greased 450 grams / 1 pound loaf tins and bake for 1 1/4 hours in an oven preheated to 180C/350F.


  3. 8 C warm water

    3 Tbs honey or handful or two of cane sugar

    2 ½  Tbsp salt

    ¾ to 1 C oil

    21-22 C flour (about ¾ whole wheat and ¼ unbleached)

    3 heaping Tbsp yeast

    ¼ C ground flax and handful whole flax (optional)

    Put water, sweetener, and salt in large bowl. Add yeast. (Add flax. Mix it all together.)

    Add 10C flour. Mix it real well. (Then add yeast (fleshmans))

    Then add 4C flour and half the oil. Mix that. Then add 2C flour and the rest of the oil. Mix it. Add rest of flour(4C) as needed while kneading the dough to a nice texture.

    Let it rise in bowl in warm oven for about an hour.

    Punch it down and make it into loaves. Fill pans half full.

    Bake at 350 degrees for about 40 minutes keeping an eye on them until they look done.

    This recipe makes about 6 loaves. For a smaller recipe, cut it in half! I make this recipe and my dad LOVES it!! Tastes sooooo good!!

    INGREDIENTS

    2 cups soy milk

    1/4 cup margarine or oil, plus extra for brushing

    1/2 cup + 1/4 t sugar

    1 1/2 t salt

    1/4 cup lukewarm water

    2 T yeast

    5 1/2 cup flour

    METHOD

    Heat soy milk to scalding. Pour into a bowl with the margarine/oil, 1/2 cup of sugar and salt.

    In another bowl combine the water, yeast and remaining sugar and allow to sit for 5 minutes.

    After the soy milk mixture has cooled, add the yeast mixture. Then add 1/2 cup flour and beat about 200 times. Allow to rest for 5-10 minutes.

    Add 4 cups flour and beat well, then begin to mix with your hands. Depending on the type of flour you're using, add about 1 more cup flour or enough to produce a consistency of dough that can be turned out onto a floured board. Knead for 5 minutes, and put into a well-oiled bowl and let rise for 1 hour. Punch down and form about 12 rolls. Place them on an oiled cookie sheet and allow to rise for 1/2 hour.

    Bake at 190C/375F for about 20 minutes or until the bottoms are brown and the tops are beginning to brown. Brush with margarine or oil
