How do i reduce the amount of left over oil in cooking?

i make stir fried food quite often, but some times there is WAY to much oil left over, leaving the rice kind of oilly. this isn't that big of a problem (olive oil) but it doesn't taste as well as if there was less oil left over. is there a method that i could use to use less oil (oil + something) or no oil (oil = something else),

i have heard of using pineapple juice, but im not sure how well that will work. butter is out (im trying to go vegan) maybe soy butter i guess.

    Olive oil + high heat = BAD FOR YOU DONT DO IT STAY AWAY DANGER STOP NOW!!!

    I will say that a great rustico olive oil is akin to drinking the nectar of the Gods... I heart olive oil!!! (just not cooking with it)

    One thing I do to cut down on oil in fried rice is make the rice the day before and let it dry on a cookie sheet in the fridge.

    This allows me to stir fry it with veggies and egg (sorry vegans) in a pan with the lightest splash of peanut or sesame oil (when using sesame oil I use a lower heat, but still enough to get a good sizzle) and it does not stick as what tends to make things stick is moisture.

    Good luck and glad to hear you are looking at vegan as a lifestyle! I would be vegan but I eat a cross between Macrobiotic and Ayurvedic diets per my constitution, and this includes fish and ghee.

  3. stir fries only require a splash of oil, you are obviously using way too much. And though you don't think it is a big deal because it is olive oil, I hate to break it to you but cooking olive oil at that high of a temp actually quickly turns it in to a partially hydrogenated oil (or trans fat) you have to use an oil that breaks down at higher temperatures (peanut oil is best for stir fries); olive oil is best for things like marinades or salad dressings. You could also add a little pineapple juice if you want for extra flavor, but it isn't necessary.

    **edit** You can find peanut oil in the asian section and/or organic section but canola oil is definately better for stir fries if you can't find it.

    olive oil shouldnt be used in stir frys

    its about the only thing i dont use it for

    peanut oil is better but you only need a ittle it has a strong flavour but ideal for what you want it for

  7. Try adding a little vineagar to your cooking - the oil will decrease - works cooking just plain meat too.

  8. Just don't use as much oil as the recipe calls for to start. As it cooks add a little more oil if you must.
