create a recipe, mix up a few batches to see if it actually works, if it doesnt tweak the recipe, if it does make up some samples to hand out to local surfers for free on the beach.  also give some free stuff to local shops and see if they like it. if they do start small scale supplying a few shops cheap, if they dont go back to square one
