  1. What third party are you concerned about?

    If you don't care about google reading your mail, you can open a google account and access it over https://mail.google.com. When accessed like this, all internet traffic from you to google is protected. So no third party will be able to access that part of your mail.

    If you are concerned about someone reading the mail stream coming into google or google reading your mail, then you need end to end encryption. This type of encryption will protect you from the NSA snooping your email, but it might also make the NSA notice you. To do this you need the cooperation of the addressee, and senders of the email. You need their cooperation because they will encrypt/decrypt the messages being sent to you.
