How do kebab shops store that meat stick?

They have that stack of meat twirling around in the heat all day. What do they do with it at the end of the day? How can they re-use that? I would cause food poisoning re-heating the meat pike.

  1. They freeze them.

I had a kebab early one day, the place had just opened, and I had to wait for the meat to thaw before I could order.

At the end of the day, the meat is supposed to be gone...no re-freezing/re-heating. The kebab place I used to frequent stopped serving when the last meat hunk was all gone. Whether or not other kebab stands do this, I'm not sure.

  2. They keep it on top of the toilet tank overnight.

  3. The restarant I was in just tossed it in the sink and shook off the roaches in the morning.
