How do people in India recognise someone as being of a different caste so easily (in a big city, for example)?

I'm trying to understand how or why caste discrimination works so effectively if a person's caste is not apparent unless s/he reveals it.

The height of the bindi on the forehead denotes how high/low caste they are. They higher it is the higher the caste of the wearer.
