  2. FLAN CAFE

    (This is so, so delicious!)

    6 eggs, slightly beaten

    12 T. sugar

    1/2 t. salt

    6 T. powdered instant coffee

    2 t. vanilla

    6 c. milk, scalded

    Kahlua

    Whip cream, whipped and sweetened

Combine eggs, sugar, salt, coffee and vanilla.

    Mix thoroughly.

Gradually add hot milk stirring vigorously until blended.

    Pour into custard cups.

Place in pan of hot water and bake in preheated oven at 375 degrees for 30-35 minutes.

    Chill thoroughly.

When ready to serve remove from cups and take a knife slicing an "x" into the top and pour in 1 t. Kahlua and top off with whipped cream.

    Serves 16

Obviously the Original Flan recipe is above minus the Kahlua and whipped cream.

  3. EASY FLAN

    1 can evaporated milk

    1 can sweetened condensed milk

    4 eggs

    1 c. sugar

    1 tsp. vanilla

Caramelize the cup of sugar in a pan and pour into bottom of Pyrex dish. (Ten inch pie plate or something similar in size.) Mix remaining ingredients and pour into the pie plate over the caramelized sugar. In pre-heated oven (350 degrees) cook about 35 minutes in a pan of water until a toothpick inserted in the flan comes out clean.

    Creamy Caramel Flan

This recipe is a cross between egg custard and cheesecake.

    Rich and delicious.

    3/4 cup white sugar

1 (8 ounce) package cream cheese, softened

    5 eggs

1 (14 ounce) can sweetened condensed milk

1 (12 fluid ounce) can evaporated milk

    1 teaspoon vanilla extract

    Preheat oven to 350 degrees F (175 degrees C).

In a small, heavy saucepan over medium-low heat, cook sugar, stirring, until golden. Pour into a 10 inch round baking dish, tilting to coat bottom and sides. Set aside.

In a large bowl, beat cream cheese until smooth. Beat in eggs, one at a time, until well incorporated. Beat in condensed and evaporated milk and vanilla until smooth. Pour into caramel coated pan. Line a roasting pan with a damp kitchen towel. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish.

Bake in preheated oven 50 to 60 minutes, until center is just set. Cool one hour on wire rack, then chill in refrigerator 8 hours or overnight. To unmold, run a knife around edges of pan and invert on a rimmed serving platter.
