How do restaurants get there recipes? do they make it them selves, if so how? also how much would you charge for a weighter an hour and what about a chef.

  1. Usually the people go to school for cooking and learn about food and sometimes people make recipes up on there own. A chef would get paid to me depends own what we serve and the waiter, it depends also.

Depends on the restaurant.   Chains hire people to develop receipies that cater to the clientel they want to attract.. hence the high fat overload food of TGIF, Applebee's , Ruby Tuesdays and the rest. Simple food, mass quanities, lots of salt, cheese and fat keeps them coming back.   Really good restaurants either are started by chef/manager teams that develop a style and food to suit their vision or are in fact chef owned.. the chef develops the receipies.  This can be as simple as a local pizza joint or Alain Ducasse's or Thomas Keller's  etc. restaurant.  Celebrity chefs i.e Emeril Lagasse have left their restaurants behind and are in the entertainment industry now, not the food industry.

    How much would I charge for a waiter (weighter?)  Depends.  If I ran an Applebees (which I WONT), I need to hire people that I can afford and still make money in my franchise. Unfortunately, that means I need to hire people who I probably wouldn't want waiting on me.   If I ran a high end restaurant, I need waiters that understand the food, the customers and can help create the atmosphere and give the service requisite within the concept.   In otherwords, the waiters need to earn a decent living so that is a career for them. I wish Applebees etc could afford to that but you wouldnt' want to pay for it.

  5. Restaurants hire chefs - the really good ones get the best chefs or even "celebrity chefs" because they develop the menus.  That's why they call them "chef de cuisine" or chief of the kitchen.

    Regarding payment, you have to negotiate with a chef considering how much business he can bring to the restaurant with his menu and cooking.

    For a "waiter" not "weighter", it depends where you live.  Usually it is minimum wage, and a good waiter makes extra money from tips.
