How do they clean dishes in a restaurant?

They bring in stray dogs and cats and have them l**k the plates clean  :)

If there is no running water, they could clean the dishes with a bleach solution and then dip them in a sink with plain water. The restaurant should close down because employee hand washing is as important as sanitary plates.

umm...good question.  let's just hope they had a lot of extra plates.

Most restaurants that do any volume have what's called a "sterilizer." Basically it's a fancy dishwasher about four feet by four feet by four feet, made of stainless steel and has room for square racks that handle glasses, dishes, pans etc at very high temperature water. (Usually 180 degrees) There is a soap concentration and a anti spotting solutions. Typically, a cycle takes about a minute. A good dishwasher has another rack ready to slide right into the machine as the other one finishes. We used to call these things sewing machines, for reasons I can not even come close to exlaining. It isnt uncommon on a busy night to run that thing three hundred or more times. Depending upon the mood you're in, it's a bunch of fun or time in he>>.

I hope this isn't a real question. I would imagine the restaurant would have to shut down. Yeah, there may be plenty of dishes, but what about hand washing? Serving water? Cooking with water? Bathrooms? Doesn't seem like the restaurant should have kept their doors open if this really happened. I would be concerned about dining there, and probably wouldn't.

I guess they don't. Most places have tons of dishes anyway for backup.
